Chocolate Cupcakes.

This weekend, I decided to experiment with a Valrhona dark chocolate cupcake recipe and modify it a little. I made 6 dark chocolate and caramelised banana cupcakes and 3 dark chocolate cupcakes soaked in the syrup from the Griottines Cherries and glazed with white chocolate and topped with a Griottines cherry. Sean loved the caramelised banana ones. I loved them both. Scrumptious!

Griottines Cherries are made from Morello cherries. In a year, there is just a 3 week window when 500 million cherries are picked.  Out of those cherries, only those which are 18-20mm are used to make Griottines cherries.
